Hello, lovely friends! How is everyone doing this week? I’m feeling pretty good myself and trying to stay caught up here. I may be cutting down to one or two breakfast posts a month as spring is coming in and I have much to do outside. My reading has slowed, but I hope to keep up to at least a book a week for now.
This week I have a new recipe, new tea, and a new book to share!
Coconut Date Rolls
Ingredients:
- 2 cups of dates soaked in water for about 10-15 minutes
- 1 cup shredded coconut (more for rolling)
- 1/2 cup almonds
- 1 TB honey
- 1 TB coconut oil
Directions:
Drain the dates. All you do is add all the ingredients to your processor!
Process until it forms into a smooth ball.
Use a small cookie scoop to drop them into more coconut shavings. Coat them up until fully covered. You can also used chopped nuts in place of the coconut shavings.
Lay them out on a tray and dehydrate for about 5-6 hours at roughly 118 degrees. This is really personal preference.
These are so delicious when warm, right out of the dehydrator!

My Thoughts:
I had plans to read this later, but after reading Thyroid Healing and having such a huge response to the protocols in the book, I decided to go ahead and pick this one up to see what else Anthony William has to say about fighting disease. So far, I do see some repeated information, but there’s so much more here. I still can’t believe all that I’ve learned and wish so much that I would’ve had this information twelve years ago when most of my symptoms started.
I’m going to say that for all of you experiencing mystery symptoms and autoimmune diseases, this is the book you need to be reading. I was skeptical, but everything is working out for me thus far and I even though I have no idea what the future holds, symptoms are getting better and I’ve never felt more positive about it. These books are the best I’ve read on autoimmune disease and chronic illnesses.

Mmmmm might try these without the coconut shavings. So what do you do if you don’t have a dehydrator? Just leave them at room temp for a bit? You can totally use whatever you want on the outside! If you don’t have a dehydrator, you can just put them on warm in your oven. Depending on your temp, I’d check them every ten minutes or so. I just like mine warm with a little crust on the outside. It’s really personal preference. I really hope you try these because they are so good!
I know you would love this tea and I was hoping I included some in your package. You’ll have to let me know. The infuser has worked so well. I’m very happy with it.

I miss those coconut date rolls for sure! I’m glad to see you’re going ahead with Anthony’s other book. Now you can tell me all about it when you finish it. I’m going to start his other one about healing foods soon. I agree with you about feeling better on the protocol. I do too. I truly believe in it and don’t think I’ll ever go backwards again now. Oh wow, I buy Coconut Date Rolls from the store. I love them. Now I know how to make them!! I love that teapot too!! I will be checking Amazon (I hate them too) for it!!
This book looks interesting to me. I have Fibromyalgia, and I’ve read and tried it all without much success. But I also have autoimmune problems too, the biggest being Rheumatoid Arthritis. If I could find some information on eating right to help the autoimmune problem, and keep the inflammation low, I would be psyched. I will definitely check out the book.

Thanks, Renee! Oh my, these aren’t bad at all. Coconut is a healthy fat and no refined sugar either. Plant fat and plant sugars aren’t the same as refined, BTW. A few are a serving size and not the whole batch lol. 😉 Too bad they aren’t healthy enough for you! 🤣
